Ingredients

 
1 JENNIE-O® bone-in thigh roast
½ cup peeled and cubed potato
¼ cup chopped onion
¼ cup chopped green bell pepper
¼ cup chopped carrot
¼ cup chopped celery
2 cloves garlic, minced
4 tablespoons butter, melted
salt and pepper to taste

Directions

  1. Heat oven to 375°F. Place turkey thigh roast in greased 9×13-inch baking pan. Place potato, onion, bell pepper, carrot, celery and garlic around turkey. Drizzle with melted butter and season with salt and pepper. Bake 1 to 1½ hours or until turkey reaches 165°F as measured by a meat thermometer.
