1 clove garlic, chopped
3 tablespoons olive oil, divided
1 tablespoon turmeric
1 teaspoon salt
1 cup orzo pasta
1 (15.5-ounce) can garbanzo beans, drained and rinsed
½ cup golden raisins
½ cup water or chicken stock
¼ cup fresh lemon juice
2 tablespoons red wine vinegar
¼ cup chopped parsley

Directions

  1. In skillet over medium-high heat, cook garlic in 1 tablespoon olive oil 30 seconds or until fragrant. Add turmeric and salt, and cook 30 seconds or until fragrant.

  2. Add orzo and cook 1 minute. Add garbanzo beans, raisins and water. Bring to a simmer and cook 5 to 10 minutes or until orzo is tender.

  3. Place pasta in serving bowl and add remaining 2 tablespoons olive oil, lemon juice and vinegar. Garnish with parsley.
