Cooking from the Heart

From a small kitchen in Mexico a half-century ago to today's family recipes, Doña Marí mole and nopalitos inspire cooking from the heart to transform every meal into a special occasion.

As most parents know, cooking to please the whole family can be a tough job—making something exciting but not too unfamiliar, flavorful but not too bold. Imagine cooking to please millions-sound impossible? More than fifty years ago in a small Mexican village, a woman named Doña María did exactly that.

Cooking from the heart came naturally for Doña María. She had always loved to cook for her family, minding the stove as first children, then grandchildren, played underfoot. As her family grew, however, it grew harder to make ends meet, so she turned to the one activity she knew she was good at. She began preparing her mole at home and selling it door-to-door throughout her village.

It quickly became a village favorite. Word spread of Doña María's delicious mole recipe, and restaurants were soon lining up with the rest of the townspeople to get their share of her mole. Before long, demand skyrocketed. So Doña María decided to share her secret with the rest of the world. And once you taste it, you'll be glad she did.

Mole

Mole sauce is considered to be the national dish of Mexico. It is a kind of Mexican gravy with chilies, nuts, spices, chocolate and seasonings. Though no one knows for sure who invented mole, it was refined by the nuns of the Order of Santa Rosa in the City of Puebla in central Mexico to impress visiting political and church officials in the 17th century.

Mole is traditionally used to flavor a wide variety of dishes—chicken, rice, beef, pork, enchiladas, beans, eggs and all kinds of antojitos (snacks). Doña María mole delivers all the rich, slow-cooked flavor the best mole offers, but is wonderfully easy to use. Just add four portions of water or broth for every portion of mole paste to treat your family to a delicious, authentic Mexican mole.

  • Mole Original—This rich mole sauce is the signature red mole sauce. It is a mix of chile peppers, sesame seeds, bread, sugar, peanuts, cinnamon and a secret blend of spices
  • Mole Pipian—A smoldering, smooth sauce made of pumpkin seed, cumin, ancho chile and spices. Used mainly with seafood and beef, this classic sauce can also be used as a great marinade
  • Mole Verde—With its signature deep green color, mole verde is a common sight in Mexico. Milder than it might look, mole verde packs just a little bite with hints of garlic, cilantro, pumpkin seeds and black pepper
  • Mole Adobo—This version of Mole is spicy and sweet. Made from chilies, peanuts, cloves and other spices, this dark brown mole adobo is sure to be a taste you won't soon forget

Nopalitos

Nopalitos are tender chopped pear cactus plants. Doña María nopalitos are harvested from San Luis Potos in Central Mexico. They are seasoned naturally with onions, Serrano peppers and cilantro, creating a fresh, homemade flavor. Nopalitos are low in fat and high in calcium and vitamin A. Vegetarians, take note: nopalitos make for a delicious meat alternative in many dishes, such as casseroles.
